The structure was meticulously renovated to the highest standards ensuring the state of the art finishes complimented the heritage soul of the 1930’s building. The tasteful fit out reflects the Italian heritage of the owners, their travels and their Wollongong home. The venue is a light filled space with a contemporary yet casual dining room and bar area with communal tables and outside seating. A local place, where you can drop in for a quick bite and drink breakfast, lunch and dinner, a special celebration with family or lazy Sunday afternoon spritz and stuzzicchini (Italian appetizers) with friends.
The Pavilion as it is affectionately known showcases authentic, modern Italian cuisine where we source the best quality produce that speaks for itself. Our menu is designed for sharing and forms part of the social spirit of communal eating offering an array of antipasti, pasta, grilled items and pizza. The heart of the Pavilion is the Stefano Ferrara 100% Woodfired Pizza Oven which was directly imported from Naples, Italy - the birthplace of the Pizza! Our Pizza’s are made Neopolitan style which means that the dough is hand rolled, the oven fired at 400 degrees celsuis and the pizza left to cook for 90 seconds. We only use Caputo Molino 00 flour and San Marzano tomatoes from Naples regarded to be the best ingredients for pizza – making is naturally sweeter and easier to digest.
Massimiliano (Max) Borsato is the Head Chef and co-owner. Max is passionate about fresh and offers a simple palette of products and genuine Italian flavours. Max gained his experience working in quality establishments such as, Bathers Pavilion Balmoral, Cala Luna, The Summit, The Park Hyatt Canberra, Bills and Ventuno.
