Popolo in Italian means people - and that’s whom this
Sydney restaurant is built for. Flavio Carnevale
and Fabio Dore are united by a common desire to
inspire a team who are passionate about all aspects
of hospitality. From the people who produce, prepare
and serve the food to those who most importantly
come to taste it - Popolo is about the people!

In recent years, Flavio and Fabio's passion for food and wine
has found them journeying back to their homeland
to source new, exciting food and wine producers
from more unique emerging regions of Southern Italy.
Along the way, their trips have caused them to meet
many young Italians who are carrying on their family
produce traditions but in their own, contemporary style.

Popolo’s food philosophy embodies the diversity of the
Italian regions surrounding the Tyrrhenian Sea.
In these regions there’s a stark simplicity to the pastas,
meats, seafood and pizzas. They offer an authentic and
memorable dining experience with a total
focus on exquisite produce.
